Ingredients

Serves 2 servings
  • 1 cupcooked rice (about 200 grams)
  • 1/2 cupsoya chunks (about 40 grams)
  • 1medium onion, finely chopped
  • 1 tablespoonginger-garlic paste
  • 1 cupspinach puree (about 100 grams)
  • 1medium green bell pepper, chopped
  • 1carrot, chopped
  • Salt to taste
  • 2 tablespoonsoil
  • 1green chili, chopped
  • 1 teaspoongaram masala

Steps

    Boil the spinach in water for 2 minutes. Transfer the spinach to cold water, then drain completely. Blend the spinach in a blender or food processor to make a smooth puree.

    Chop all the vegetables.

    Soak the soya chunks in water for a few minutes, then boil them in a little water until soft.

    Heat oil in a large skillet or pan. Add cumin seeds and let them sizzle. Add the chopped onion and sauté until slightly soft. Add the green chili and ginger-garlic paste, and cook for a minute. Add the bell pepper and carrot, and cook until the vegetables are tender. Add the spinach puree and soya chunks, and cook well.

    Add the cooked rice, salt, and garam masala. Mix everything thoroughly until well combined.
