Ingredients

2 - 3 servings
  1. ✅️ A. CHICKEN SKEWER
  2. 550-600 gboneless chicken thighs cut into manageable bite sized
  3. 1 tspgarlic powder
  4. 1 tsponion powder
  5. 1 tsppaprika (sweet or smoked)
  6. 1 tspwhite pepper powder
  7. 1/2 tspturmeric powder
  8. 1/2 tspcayenne pepper (optional)
  9. 2 tspchicken seasoning powder/ bouillon (or as needed)
  10. 2 tbspoil (sesame, olive or any cooking oil)
  11. ✅️ B. THE SAUCE
  12. 1/2 Ccreamy mayonnaise
  13. 2 tbspSweet Thai Chili Sauce
  14. 1 tbspSriracha sauce
  15. 1 tsprice vinegar or lemon juice (personal preference)
  16. ✅️ C. BAMBOO STICKS
  17. 1. To be soaked in the water for 10 mins to prevent them from burning during cooking process (Just in case)
  18. 2. Bamboo skewers

Cooking Instructions

    ✅A - CHICKEN SKEWERS : Cut boneless chicken thighs into bite sized pieces, roughly the same size for even cooking. Next combine and thoroughly mix dried powdered spices - onion powder, garlic powder, paprika, white pepper powder, cayenne pepper powder, turmeric and chicken bouillon in a small bowl. Add this mixed powdered spices and 2 tbsp of sesame oil (or any oil) to the chicken. Mix well until chicken pieces are fully coated. Marinate for 30 mins.

    ✅B - THE SAUCE : While the chicken is marinating, prepare the sauce. Combine and mix all ingredients listed for the sauce in a bowl. Mix well until smooth.

    After 30 mins, thread chicken pieces using bamboo skewers. Place them just close but not too crowded. Preheat air fryer at 400°F or 200°C-204°C for 5 minutes. Then place chicken skewers in the air fryer in a single layer. Spray or brush a little oil and then cook for 8 - 10 minutes. Flip or turn the chicken skewers. Continue to cook for another 6 minutes or until the pieces are light golden. Note: avoid over crowding your air fryer. Cook in batches if necessary.

    Once cooked, remove the chicken skewers from the heat and immediately brush/baste them with the sauce prepared earlier.

    Serve hot or warm.

    Notes: 1. Adjust seasonings to the amount of chicken you have. 2. When making this chicken skewers, it's best to cut chicken to almost the same size and space them evenly on the skewers so they cook evenly. 3. Adjust seasonings and spices to your liking.
