No Cook Stuffed Bread Rasmalai/Dessert

Rasmalai is a classic Indian Dessert usually made with the tender paneer balls soaked in sweetened milk. Its a delicious variation where the Rasmalai balls are dipped with an extra layer of rich flavoured milk called Rabri. This Dessert is loved by everyone.
So, I tried making Rasmalai with brown bread this is what we used to have but you can also opt for white bread. Then dipped in cardamom flavour sweetened milk. Then filled the bread slices with dry fruit stuffing and lastly mixed the left over sweetened milk with milk powder and sugar powder to pour upon the Rasmalai.
It came out so delicious and it was wonderful and refreshing to have it when chilled. Give it a try and you will surely love it!
Behind the Scenes - The Challenge was about Fireless Cooking, but i wanted to have that saffron colour in my recipe which you usually get either in a warm or hot milk. But thanks to Sun God! It automatically came due to the Sun rays on the dish while taking pictures in a small utility area attached just to my kitchen where I used to have all my recipe pictures. Further, it's really challenging to try for perfect pictures with a phone in one hand and a spoon in other hand focussing on the dish while staying alone at home with my little monster. But when your recipe came out well, you feel happy at the end!

Steps

To begin with, take ingredients to prepare sugar powder. Blend 1/4 cup of sugar along with 2 to 3 cardamoms. Keep aside.

Now, take ingredients to prepare stuffing. In a mixing bowl, add 2 to 3 tablespoons of dessicated Coconut, chopped nuts and 1 teaspoon of prepared sugar powder. Also, add 1 tablespoon cream (malai) and mix all the ingredients well. Keep aside. Note - Increase the quantity of the ingredients depending upon your preference.

Now, take ingredients to make round balls of Rasmalai and milk mixture. In a mixing bowl, pour 1 cup to 1/2 cup milk and 1 teaspoon Sugar powder. Mix well.

Now, cut 5 to 6 bread slices from its sides and dip the slices in the milk bowl.

Take out from the milk and squeeze extra milk from the slices gently by keeping it in between the palms of your hand. Place dry fruit stuffing and make a round ball making sure it is secured well Note - Be gentle while sequeezing making sure not to break the bread slices.

Prepare rest of the balls following same way.

Now, in a mixing bowl, add 1/4 cup of milk powder and add left over milk from the bowl and left over sugar powder.

Mix it well. Also, add few saffron strands to add nice color. Note - Add more milk or sugar powder to pour upon rasmalai if required.

Mix well and pour this mixture over prepared Rasmalai. Garnish it with cherries, pistachios, rose petals or any nuts of your choice.

Refrigrate and serve chilled.
