Green Onion and Miso Butter Noodles

Prepare cabbage by cutting into bite size pieces

Make sauce: combine soy sauce, sake, sugar and miso. Smash garlic and add to sauce

On medium low, heat avocado oil and scallions till fragrant. Then add cabbage until slightly softened

Cook pasta of choice till al dente per the package instructions (I prefer linguini, but have made with angel hair and it soaks up the sauce really well)

Reserve a few tablespoons of pasta water and drain.

Add cabbage, scallions and sauce to drained pasta and stir fry till sauce is coated.

Optional, but for richness, I recommend adding 1 tablespoon of butter. Mix vigorously to emulsify butter. Enjoy!
