Lentil, Chickpea & feta salad

Ingredients

4 servings
  1. 1/3 cupextra virgin olive oil
  2. 2 Tbsp.lemon juice
  3. 2 tsp.Dijon mustard
  4. 1-2garlic cloves, minced
  5. 1 tsp.ground cumin
  6. 1/8 tsp.cayenne pepper
  7. 1/4 cupchopped fresh mint or parsley
  8. to tasteSalt and freshly ground black pepper
  9. 1 canchickpeas, drained well, rinsed and drained well again
  10. 1 canlentils, drained well, rinsed and drained well again
  11. 100 gramsfeta cheese, crumbled
  12. 1/2 cuppitted black olives
  13. 1/2medium red onion, finely diced
  14. 1/2medium green pepper, finely diced
  15. 12cherry tomatoes, each quartered

Cooking Instructions

  1. 1

    Combine the first eight ingredients in a bowl. Add the remaining ingredients and toss to combine. Cover and refrigerate the salad until ready to serve. Gently toss again just before doing so.
