Gondhoraj Chicken

Firstly we need to marinate the chicken by adding the above ingredients mentioned in the ingredients section including gondhoraj juice. Donot add any salt in marination. Combine it well with the chicken. Now cover it and keep it in a refrigerator for about 4 hours or overnight.

Now take a pan, heat it; add 3 to 4 tbsp of mustard oil. Then add all the khada masalas like bay leaf, dried red chillies, cloves, green cardamom and peppercons. Let them splutter a while. Then slit green chillies and curry leaves. Then add grated onions. Cook for about 2 minutes then add ginger-garlic paste and mix it well.

Let the masala cook for about 3 to 4 minutes then add some salt and turmeric powder. Give it a good mix. Then add all the dry spices like coriander powder, cumin powder and garam masala. Mix it well. Keep the flame low and fry the masala until oil starts oozing out.

Now add the marinated chicken in it and mix it well with the masala. Add some salt as per your taste and give it a mix. Now cover the pan and let it cook for about 35 minutes. Add half a cup of water in between so that the chicken gets cooked properly. Keep the flame low and keep stirring in between.

It will take about 40 minutes to 1 hour to cook the chicken completely. Once the chicken gets cooked. You will notice that the oil will start releasing. Now switch off the flame. Garnish it with some chopped coriander and with some slices of gondhoraj. Serve it hot with some steamed rice or fried rice.
