Butter a skillet and warm over medium heat.

For kataifi: Pull apart and toast in the skillet until golden and crisp. For nut crust: Mix ingredients until a sticky dough forms.

Stir in tahini and agave until evenly coated.

Press into the base of a springform pan or mold. Set aside.

Combine cream cheese, macadamia cocoa butter, coconut condensed milk, agave, and vanilla in a large bowl.

Whip until smooth and creamy. Pour over the prepared crust and smooth the top.

Freeze for 1 to 2 hours, or until set.

Melt chocolate wafers with a splash of coconut milk over low heat until smooth and glossy.

Pour over the chilled cheesecake and top with crushed pistachios.

Return to the fridge or freezer until fully set and ready to serve.
Tips
Feel free to adjust the sweetness of the filling by adding more or less agave to taste.
