Braised Pork, Eggs, and Tofu

This braised pork is so flavorful, you’ll want to eat two bowls of rice with it! For this recipe, I use finely ground pork shoulder—having a bit of fat makes it more delicious. I also add eggs and fried tofu cubes. It’s perfect for mixing with rice! Here’s a quick way to make tender boiled eggs for braising: soak the eggs in hot water while you cook the pork. By the time the pork is almost done, you can peel the eggs and add them in! This braised dish is also great served over noodles.

Fill a small pot with enough water to cover the eggs. Heat until the water is warm, then gently add the eggs. Bring to a boil, cover with a lid, turn off the heat, and let sit for 8 minutes. Remove the eggs, rinse under cold water, and soak in cold water until cool. Peel the eggs. While the eggs are resting, heat oil in a pan and sauté the ground pork and minced garlic until fragrant. Add the sugar and fried shallots, and stir-fry until aromatic.

Add the soy sauce, rice wine, white pepper, water, and a little salt. Bring to a boil, then simmer on low heat for about 10 minutes to let the flavors develop. Taste and adjust the seasoning if needed. Add the peeled eggs and tofu cubes, and continue to simmer until everything is flavorful and evenly colored. Stir occasionally so the eggs absorb the color evenly.

Your fragrant braised pork, eggs, and tofu are ready! Serve over rice, noodles, or with blanched vegetables.
