Here's a nutritious twist to everyone's favourite Dosa which I have made in tricolour to honour our national tiranga flag. Prepare the white batter: mix the Semolina, dessicated coconut and salt in batter. Add water as needed for a pouring consistency. Keep covered for 10 minutes

For orange batter: grind the carrots and tomato along with spices to a paste. Add this paste, semolina and water to the batter and make it to pouring consistency.

For the green batter: Grind the capsicum, green chillies, coriander leaves, green peas and spices to a smooth paste. Then add it to the batter along with Semolina, salt and water. Adjust to pouring consistency.

Heat a large tawa. Sizzle it with some water and then grease it with ghee. Wipe well to remove excess. Then pour 1 ladle of orange batter in a rectangular shape. Below that pour the white batter in the same shape. Then lastly pour green batter. Make sure all the portions are joined well.

Pour ghee on the sides and cook on high flame. Turn over and cook the top side just lightly. Then transfer to a greased plate. When slightly cooled, cut with a scissor in Tricolour Flag shape. Make all dosas similarly.

Your Tricolour Veggies Dosa is ready. Garnish with an onion slice coloured in edible blue colour to make the Ashok Chakra in the centre. Serve immediately with chutney and enjoy independence day.
