Mix all ingredients except for 1 cup of water in a bowl.

Gradually add the second cup of water, checking the batter is runny but not watery.

Heat a non-stick pan and lightly grease if needed.

Pour just enough batter to cover the bottom of the pan thinly.

Cook until the edges lift, then flip and cook the other side.

Remove and sprinkle with cinnamon sugar while warm, or use a savory filling.

Serve with a drizzle of lemon juice if you didn’t add it to the batter.
Tips
For sweet options, try caramel and banana, Bar-One ice cream topping, or peppermint crisp. For savory options, use curried mince or chicken mayo.
