Chicken Florentine Meatballs over Zucchini Noodles

Getting ready for a keto run after New Year's. I've made this recipe a couple times and I felt that it was worth sharing. This is a double batch recipe. So trim it in half if you don't want leftovers. Fun fact: the sauce from this recipe also makes a good dipping sauce with pita chips.

Thaw spinach in a colander under cold running water

Grab spinach, one handful at a time, and squeeze as much water out as possible. You will end up with several flat, hard clumps like the ones shown on my cutting board here.

Break up the clumps by chopping with a chef knife

Open your bag of pork rinds. Squeeze the pork rinds while still in the bag. Grind this product with your hands until they are reduced to small crumbs. This will act as our bread crumbs in this keto-friendly dish.

In a large bowl, combine chicken, half of the spinach, onion, egg white/substitute, pork rind crumbs, and seasonings. Mix well.

Spray a large baking sheet with cooking spray. Grab the mixture from the large bowl, one handful at a time, and form into meatballs. Place them on the baking sheet. Place in oven at 350° and bake for 30 min. Flip the meatballs over halfway through the cooking time.

While the meatballs are in the oven, we can start to prepare the sauce. Spray a large non-stick skillet with cooking spray heat over medium heat about 1 minute.

Place butter in pan to melt and swirl the pan to evenly coat with butter

Add minced garlic and cook until fragrant, about 1-2 min

Add the remaining half of the spinach, cream cheese, parm, and 2 cups of water. Stir until uniform and cook about 4 minutes. Reduce heat to low.

At this time you can spiralize your zucchini

The meatballs should be just about ready. Cut open to ensure they are cooked through

Serve sauce and meatballs over plate of zucchini noodles
