To begin, dry roast mustard seeds, fenugreek seeds, and fennel seeds. Grind coarsely and keep aside.

Heat mustard oil to the smoking point and let it cool a bit. Add the asafoetida.

Next, add the peeled garlic and cook until it begins to change color. Do not brown.

Turn off the heat. Add the ground masala with red chilli powder, turmeric powder, and salt. Mix well.

Finally, add the vinegar and mix.

The Instant Garlic Pickle is ready to serve, but it tastes better after a few hours, when the garlic has absorbed the flavors. Enjoy with puris or parathas.
