Purple mustard green dip- like purple spinach dip

I found these purple mustard greens at my local farmers market and had to experiment. Purple vegetables often loose their color once they’re cooked- purple mashed potatoes usually turn grey. The vivid color of this dip blew my mind. This picture doesn’t do it justice.
The most remarkable thing was how delicious it was! I love spinach dip, but this was even better.
If you ever have the chance to buy purple mustard greens, I highly recommend you do.

Melt butter in lg sauté pan. Add onions and cook until translucent.

Add garlic and the mustard greens and salt and pepper. Cook until greens have wilted.

Sprinkle your flour over your veg and cook for 3 minutes, or until flour starts to turn slightly golden

Add milk and cream and bring to a boil. Reduce heat to simmer and simmer for several minutes while it thickens.

Reduce heat to low and add cream cheese, 1 c, parm, and half cup of each mozzarella and Gruyere. Stir until everything has combined. Add nutmeg.

Add your cheesy dip into a small buttered baking dish. Top with the rest of the cheese and cook at 400 for 20 min or until it’s golden and bubbly.

If you want to use toasted bread to dip, cut a baguette into 1/4” slices, top with olive oil and put them in the oven for about 5- 7 min while the dip is cooking. Or until they’re as toasted as you’d like
Tips
Before you bake it, taste to adjust the salt levels
If it’s too thick, add more milk
Any hearty leafy green, or a mix of them could work in this recipe, or a mixture but only purple mustard greens will yield this brilliant purple.
You can use any cheese you’d like.
