Cut the chicken into bite-sized strips. Marinate with 1 tablespoon oyster sauce for at least 10 minutes. Coat the chicken lightly with tempura flour. Fry over high heat.

Add a little oil to a pan and sauté julienned ginger, crushed green peppercorns, and thinly sliced lemongrass until fragrant.

Add the fried chicken and bell peppers to the pan. Stir-fry together and season with a little fish sauce. Serve hot, garnished with green onion or cilantro.
