I love this recipe so healthy and here (Thailand) so cheep this cost less that £2 and truely AMAZING. You can use any local cheap white fish Children love it too and packed with vitamins and everything from the Salad. ENJOY :P

Take you fish fridge and Clean in running water - I ask Fish Monger to make 2 filets so main bone removed and cleaned. I put in sink and sprinkle with 1 Tsp Salt and cover in water for 5 mins to clean.

Remove fish, Pat dry with kitchen paper and sprinkle a little more salt both sides. Allow to dry. Then sprinkle with Flour Both Sides and slightly run in with hands. Now Prepare the Salad.

For Salad mix everything in a large bowl. Adjust the flavours to you favourite. At the Moment our chillies (from Garden) are MEGA spicy so I onle used one. Put into a serving bowl and put into fridge until ready to serve.

In a Large frying pan heat the oil in a DEEP frying pan (best with a lid or Messe Cover). Heat to 190c. Carefully Add the First FilletSkin side Down (you should have 2 if whole fish) cover to stop oil "spitting" and cook for 6-7 mins. (depends on fish size for I work on 8 mins per 3cm Thickness fish). Using a large Fish slice and tongues turn the fish over Skin side up for 2-3 more mins. - a Good rule is once the bubbles have subsided its nearly cooked so give 1 min then turn.

Remove from Oil and drain on Kitchen paper. Serve stightly warm and with Jasmine Rice - ENJOY :P
