Ingredients

  1. Base
  2. 2 CupsAlmond Flour (you can ground almonds to flour yourself)
  3. 3 tablespoonsrice malt syrup
  4. 2 tablespoonscoconut oil (melted)
  5. Pinchsea salt
  6. 1 teaspoonVanilla extract
  7. 2 tablespoonsnatural peanut butter
  8. Centre filling
  9. 3 Cupspitted Medjool Dates
  10. Pinchsea salt
  11. 2 tablespoonscoconut oil (melted)
  12. 2 tablespoonsnatural peanut butter
  13. 1/2 Cupunsalted roasted peanuts
  14. Chocolate topping
  15. 3 tablespoonsrice malt syrup
  16. 2 tablespoonsCacao powder
  17. 4 tablespoonscoconut oil (melted)

Steps

  1. 1

    Place all ingredients for the base into a food processor & blend until it resembles a biscuity dough.

  2. 2

    Press the dough evenly into a square 20x20cm tin. Which has been lined with baking paper.

  3. 3

    Clean the processor, then place all the filling ingredients except for the peanuts and blend for a while until the mixture turns into a sticky caramel like consistency. Add the peanuts to the mixture and pulse a few times to just mix them in so that the chunks are kept.

  4. 4

    Evenly press the caramel mixture onto the base & place back into the freezer for at least 4hrs to set.

  5. 5

    Place all the chocolate layer ingredients into a bowl and whisk together until it forms a runny consistency

  6. 6

    Pour on top of caramel layer.
