  • 1/2 poundshell pasta
  • 1/4 cupunsalted butter
  • 1/4 cupall-purpose flour
  • 1 tspmustard powder
  • 1/4 tspcayenne
  • 1/2 tsppaprika
  • 1/4 cupcricket protein powder
  • 3 cupsmilk
  • 1 tspkosher salt
  • 1/4 tspblack pepper
  • 1/2large egg (whisked)
  • 2 ozMonterey Jack
  • 2 ozmozzarella
  • 6 ozsharp cheddar

    Prep: preheat oven to 350°F (175°C). Shred cheeses, reserving 4 oz of cheddar for the top.

  2. 2

    Pasta: boil 1/2 lb pasta until al dente, then drain and cool.

  3. 3

    Sauce: melt butter, stir in flour, spices, and protein powder. Gradually stir in milk, salt, and pepper, cooking for 5 minutes before removing from heat.

  4. 4

    Egg & Cheese: temper the egg by whisking it into 1/2 cup of cooled sauce, then stir back into the pot over medium-low heat. Melt the cheeses and stir in the pasta.

  5. 5

    Bake: pour into a smaller, 8x8 or 9x9-inch dish, top with reserved cheese, and bake for 30 minutes
