In a bowl, marinate the chicken with salt, pepper, red chilli powder/flakes and 2 tbsp of olive oil. Leave for 1-2 hours. If in a hurry, cook immediately!

20 mins before dinner, heat a non-stick pan. Add 2-3 tbsp of oil. Place the chicken pieces in the pan.

On medium heat, saute the chicken for 3-4 mins, till it turns brownish. Remove.

To the same pan, add in the garlic and onion. Stir for a minute.

Next, add the bacon (if using). Saute for 30 secs. Then add in all the vegetables and the dried herbs.

Toss all the veggies around for 2 mins.

Next add the sauteed chicken. Season with salt, pepper and red chilli. Gently toss everything around.

Bring the flame to low, and cover the pan.

Every 2-3 minutes, remove the lid and gently stir everything.

Do this for the next 10-12 mins or under chicken is cooked through.

Serve hot, and enjoy with crusty bread!
