First, heat ghee in a pan and once it is nicely hot, add cumin seeds and let them splutter.

Meanwhile, keep all the dry fruits—halved cashews, sliced almonds, and raisins—ready in a plate.

Once the cumin seeds crackle, add these prepared dry fruits into the pan.

Saute these dry fruits gently with the cumin seeds on a low flame so they get perfectly crunchy.

Once the dry fruits are slightly sautéed, add small pieces of boiled potato to the pan.

Now, mix the potatoes and dry fruits well in the ghee and let them cook for 2-3 minutes until the potatoes turn slightly crispy.

Next, add the well-soaked and fluffy sabudana on top of this fruity-nutty mixture.

Right after adding the sabudana, sprinkle rock salt (sindhal) by hand according to your taste.

Mix all the ingredients together very gently using a spatula so that the sabudana pearls do not break.

Finally, turn off the flame, pour fresh lemon juice over it, and give it a final mix. Your mouth-watering, non-sticky, and delicious Crunchy & Fluffy Nutty Sabudana Khichdi is ready!
Tips
∆ Perfect Soaking : Make sure to drain all the water thoroughly after soaking the sabudana. Any leftover water will make the khichdi sticky.
∆ Crunchy Nuts : Always sauté the dry fruits on a low flame so they get perfectly crunchy without getting burnt.
