Ingredients

  1. 500 grmince chicken
  2. 3 tbspchopped green onion
  3. 2 tbspchopped coriander
  4. 2 tbspbread crumbs
  5. 1 tspmince garlic
  6. salt and pepper
  7. chicken powder
  8. 2 tbspthai red curry paste
  9. 3 clovesgarlic,minced
  10. 1/2 clovewhite onion
  11. 1 tspdried thai herbs
  12. 1 cancoconut milk (Aroy-D or Kara santan is the best)
  13. 100 grbaby corn, cut in half
  14. vegetable oil or canola oil

Cooking Instructions

    Make the chicken meatballs : mix all together minced chicken,chopped green onion and corriander leaf,salt pepper and chicken powder

    Put 2-3 spoon of vegetable oil in the pan with medium heat, cook the meatballs till golden brown and put aside

  3. 3

    In the same pan, saute garlic together with chopped onion until fragrant, and add thai red curry paste stir until fragrant,then add coconut milk. let simmer for about 5-10 mins

    After the sauce simmer add the baby corn, let it simmer about 2-3 mins till soft and add chicken meatballs

  5. 5

    Stir well and add chopped green onion,chilli

  6. 6

    Best serve with hot rice
