Ingredients

  1. 2chicken breasts, chopped into bite-sized chunks
  2. 3 tspfresh ginger, finely chopped
  3. 2 clovesgarlic, finely chopped
  4. 1800 mlchicken stock (4 cubes)
  5. 4spring onions, finely chopped
  6. 6mushrooms, thinly sliced
  7. 1large tin sweetcorn
  8. 100 g(2 nests) wheat or rice noodles
  9. 3 tspsoy sauce
  10. 2 tspcrushed chillies
  11. 2 tspdried basil
  12. 2 tspdried mint
  13. 1 bagprawn crackers (optional)

Steps

  1. 1

    Add the garlic, ginger and chicken chunks to the stock and bring to the boil.

    Once fully boiling, reduce the heat and partially cover. Leave to simmer for 25 minutes.

    Add the mushrooms, spring onions, sweetcorn, noodles, soy sauce, chillies, mint and basil. Stir thoroughly for 2 minutes and then let simmer for 5 more minutes.

    Serve and enjoy! Highly recommend a side of prawn crackers !
