Irish potatoes is a simple and light food that can be eaten fried, boiled or as porridge. Can be taken any time of the day, though its light.

Peel your Irish potatoes, wash and put on fire. While on fire, you wash your pepper and onion, chop and set aside. Break your eggs and also set aside.

Once the Potatoes is ready, you put it down, get your frying pan or any pot you wish to use and put on fire. You pour your ground nut oil into the pan, allow it to get hot then you add little onion to the oil.

Allow it to fry a little then you add your pepper, onion, curry, thyme and the maggi to it, if you wish to add tomato, you can.

You allow it to fry a little more, then you whisk your egg and add to it then you keep stirring it until thick. you add very little water to it so it wont be too dry and a pinch of salt to taste, cover and allow to cook a little.

Ready to be served with your Irish potatoes. Enjoy
