Layered Pasta Bake

This is essentially a baked spaghetti dish. I just happened to have half a box each of linguine and fettuccine when I went to make this tonight. The pasta layers are bound together with a tasty egg and cottage cheese mixture, and using leftover or jarred spaghetti sauce keeps this so easy to make! I used leftovers from my Fuhgitaboudit Spaghetti Sauce recipe (on my page).

Ingredients

6-8 servings
  • 16 ozlong pasta (like spaghetti, linguine, etc)
  • 2eggs
  • 1 (16 oz)container cottage cheese
  • 1/4 cupshredded parmesan
  • 1 tbsdried parsley flakes
  • 1 tspdried oregano
  • 1/2 tsponion powder
  • 1/2 tspgarlic powder
  • 1/2 tspsalt
  • 1/4 tsppepper
  • 4 cupsspaghetti sauce (any variety)
  • 1 1/2 cupsshredded mozzarella
  • extra salt for pasta water

Steps

    Preheat oven to 375°F. Spray a 2 quart casserole dish with olive oil cooking spray. Set aside.

    Bring a large pot of generously salted water to a boil. Add pasta. Boil for 8 minutes.

  3. 3

    While pasta cooks: In a large bowl beat eggs. Add cottage cheese, parmesan, parsley, oregano, onion powder, garlic powder, salt, and pepper. Stir together until well combined.

    When pasta is done carefully drain using a colander. Add pasta to cottage cheese mixture. Stir to fully coat pasta with mixture.

  5. 5

    Place half the pasta in the casserole dish. Spread half the spaghetti sauce in an even layer over the pasta. Repeat with remaining pasta and sauce. Sprinkle mozzarella evenly over the top.

  6. 6

    Bake covered for 30 minutes. Uncover and bake 15 minutes more. Let rest 10 minutes before serving.
