Cooking Instructions

Saute onion, garlic, chilli, bay leaves and pepper corns in olive oil and duck fat over medium heat.

Add bacon, brown, then add white wine.

Add tomato paste and simmer for roughly 5 minutes or till tomato paste has cooked through.

Add chicken livers, simmer for a further 10 minutes.

Add cream and salt to taste.
- 6
Simmer till liver has cooked through.
- 7
Serve with freshly cooked pasta of your choice, garnish with fresh parsley.
