Ingredients

  1. 500 gramschicken liver
  2. 250 gramssmoked bacon
  3. 1/2onion
  4. 1 clovegarlic
  5. 2bay leaves
  6. 1 tspchilli flakes
  7. 125 mldouble thick cream
  8. 50 gramstomato paste
  9. 50 mlwhite wine
  10. 5black pepper corns
  11. 1 tspsalt
  12. 1 tbspduck fat
  13. 2 tbspolive oil

Cooking Instructions

  1. 1

    Saute onion, garlic, chilli, bay leaves and pepper corns in olive oil and duck fat over medium heat.

    Add bacon, brown, then add white wine.

  3. 3

    Add tomato paste and simmer for roughly 5 minutes or till tomato paste has cooked through.

    Add chicken livers, simmer for a further 10 minutes.

    Add cream and salt to taste.

  6. 6

    Simmer till liver has cooked through.

  7. 7

    Serve with freshly cooked pasta of your choice, garnish with fresh parsley.
