Ingredients

6 servings
  1. 2 lbboneless pot roast, cut into 1" cubes
  2. 2 tbspolive oil
  3. 1 largeonion, chopped
  4. 2 cloveminced garlic
  5. 1 largebell pepper, diced
  6. 1jalapeno pepper, diced
  7. 3 tbspchili powder
  8. 2 tbspsmoked paprika
  9. 1 tbspred pepper flakes
  10. 2 canfire roasted tomatoes
  11. 1 canblack beans, drained and rinsed
  12. 2 tbsptomato paste
  13. 12porter or similar dark beer

Steps

  1. 1

    In large stock pot or dutch oven, heat oil over medium-high heat and add meat.

  2. 2

    Cook for about 2 minutes then add onions and continue to cook until meat is browned and onions or golden.

  3. 3

    Add garlic, peppers, chili powder, paprika, and pepper flakes. Stir until spices become fragrant.

  4. 4

    Add the rest of the remaining ingredients and stir to combine.

  5. 5

    Cover and simmer over low heat for at least 1 hour, until the beef is fully tender.
