  1. 1yellow bell pepper; large dice
  2. 6jalapenos; 1/3 inch slices; some seeds left intact
  3. 1 smallbag of tiny baby carrots
  4. 1/2 stalkasparagus; trimmed & cut in half
  5. 1yellow or red onion; large dice
  6. 1 bunchgreen onion; sliced 1/3 inch thick on the bias
  7. 2 clovegarlic; minced
  8. 2 tbsponion powder
  9. 1 tbspchile powder
  10. 1 tbspcayenne pepper
  11. 1 tbsplemon peel seasoning
  12. 1 tbsporange peel seasoning
  13. 1 tbsppaprika
  14. 1zest of one lemon for garnish
  15. 1salt and pepper

Steps

  1. 1

    Heat oil in a large saute pan. Add veggies, but not garlic. Season. Toss.

  2. 2

    Saute approximately 8-10 minutes or until veggies are caramelized and tender.

  3. 3

    Add minced garlic approximately 2 minutes before veggies are done.

  4. 4

    Variations; Corn, mustard, honey, vinegar, pesto, roasted red pepper sauce
