Healthy Filipino Green Bean "Stew"

Cooking Instructions

In a pot, heat oil and sauté onion until just translucent
- 2
Add ground beef, break up and brown. (About 5-8min) add salt and pepper.
- 3
Add the tomato, ginger and fish sauce and stir together for 3 min. (Play with the amount of ginger and fish sauce to your taste)
- 4
Add the green beans, stir. Then add the water.
- 5
Bring everything to boil, and cook until green beans are cooked but still a little crisp.

Eat alone as a stew or serve along side some steamed jasmine rice. 😆

**you can eat the ginger, but it's mainly for flavor. Remove when serving. Also my hubby like to add a few dashes of fish sauce to his plate***

Hi everyone!!! After yesterday’s Clean Monday or Ash Monday and a day of fasting, I am back with another Chicken recipe. 🙂 Fasting usually last for about 40 some odds days, which is way to long of time at least for me that is, so what I usually do is fast the last week before Easter. I think most people do that know, busy schedule and fasting a bit difficult. If your in the mood to eat something different give this recipe a try, you just might like it. 🙂My husband is a fan of Green beans, me not so much, but before I say NO to something I like to try it out first, I have actually tried to eat them a few times in the past, but it was a no go. I gave it one more try again today just in case my tastebuds have changed aaaand NO they have not..:), so I can officially say I am not a fan of Green Beans.Since, I do love Chicken this recipe has the combination of both worlds, and the taste is just superb (Chicken of course is). 🙂 With the addition of fresh tomatoes and herbs simmering together just makes you want to eat it all at once. Adding a side dish of Feta cheese, drizzled with Olive Oil, topped with fresh Oregano, dipping that fresh slice of bread into the sauce AWWW!! what more can I say. 🙂 Foodzesty -

Monggo was not one of my favourite dishes growing up. I didn't like the way it tasted, and I didn't like the mushy, gritty texture it left in my mouth. To be fair, I hated all legumes back then, so my dislike for monggo made perfect sense. Anyway, this bias lingered for years, and it wasn't until well into my adulthood that things started to change. Slowly, surely, beans made their way back into my diet. I even accepted them in my chili (but will leave them out if given a choice 😉). And so nowadays, my mom's monggo is one of the home-cooked meals I look forward to most. This is my take on that dish. Unlike my mom's, I used cherry tomatoes and added them closer to the end of cooking, because I like seeing them in there. I also added coconut cream, to give the final stew a little extra richness. And, because I shared this dish with my cousin who has a shellfish allergy, I left out the shrimp that would otherwise go in. Feel free to add them. Whichever you choose, it'll be delicious.
