Ingredients

  1. 2papayas
  2. 1 mediumred onion
  3. 2 clovegarlic
  4. 1/2inch piece fresh ginger
  5. 1 cupred wine vinegar
  6. 1/2 cupgolden brown sugar
  7. 1/4 cupdried cranberries
  8. 1 stickcinnamon
  9. 1/2 tspsalt

  1. 1

    peel papaya and cut in half

  2. 2

    scoop out the seeds and cit into large chunks

  3. 3

    peel and chop onion

  4. 4

    peel the garlic and ginger, and mince both

  5. 5

    combine all ingredients in large saucepan and bring to a boil.

  6. 6

    lower heat and simmer, stirring occasionally,until the onion is tender, about 15 minutes.

  7. 7

    cool to room temp.

  8. 8

    remove the cinnamon stick and puree in food processor or blender until smooth.

  9. 9

    sauce may be used immediately or refrigerated up to 2 weeks.

I live in Portland Oregon, i love the outdoors and hunting is my passion. I used to collect wine, but no more. I own one business, down from 3. I enjoy gardening and plants. I grew up in Texas, and had horses, rode in junior rodeos, even won a few. When i moved to Oregon, i was the only one of my friends that could ride and rope... Hence the nickname.
