I'm always trying to find ways to make healthy dinners that still taste good. I think this satisfies both!!

Prep peppers by cutting off top and removing stems, seeds and membranes. Boil water and submerge peppers for 3 minutes. Set aside. Preheat oven to 350.

Brown turkey, onion and garlic. Add beans, tomatoes and rice/quinoa mix, taco sauce and spices and stir together thoroughly. Let simmer 7-10 minutes then stir in half the cheese.

Place peppers in 2 qt baking dish and stuff with meat mixture. Top with remaining cheese and taco sauce. Bake 15 minutes til cheese is browned and bubbly.
