Ingredients

  1. 1 lbground turkey
  2. 1 mediumonion, chopped
  3. 3 clovegarlic, minced
  4. 1 canred beans with chili seasoning, drained
  5. 1 cansalsa-style fire roasted tomatoes
  6. 1 packagesSimple Truth Organic Red quinoa and brown rice (frozen)
  7. 1 tbspchili powder
  8. 2 tspground cumin
  9. 6 tbspmild taco sauce
  10. salt and pepper
  11. 4 ozpepperjack cheese, shredded, divided
  12. 4 largered, yellow or orange peppers

Cooking Instructions

  1. 1

    Prep peppers by cutting off top and removing stems, seeds and membranes. Boil water and submerge peppers for 3 minutes. Set aside. Preheat oven to 350.

    Brown turkey, onion and garlic. Add beans, tomatoes and rice/quinoa mix, taco sauce and spices and stir together thoroughly. Let simmer 7-10 minutes then stir in half the cheese.

    Place peppers in 2 qt baking dish and stuff with meat mixture. Top with remaining cheese and taco sauce. Bake 15 minutes til cheese is browned and bubbly.
