Cooking Instructions

Pour flour into bowl. Make a well and add eggs to middle. Beat eggs and slowly incorporate to form dough, adding water if too dry.

Let dough rest for 15-20 min

Add broth to a large pot on stove. Grate ginger and add. Add soy sauce and salt to taste. Pour in 1 tablespoon vegetable oil.

Roll out dough and cut into strips. Bring broth to a boil and sprinkle in cut noodles. Cook for 4-5 minutes.

Take remaining egg and poach it in the broth for 3-4 minutes (optional)

Chop onions and pepper and add. Add crushed red pepper. Serve immediately and enjoy!

One time I tried using the leftover cooking liquid from making miso simmered chicken giblets into a soup, and it had lost that miso aroma. So I thought that miso is better if you stir-fry it a bit. Just stir frying it still leaves a lingering miso aroma, but when I tried adding a little soy sauce it was transformed into a miso ramen soup flavor.I've been holding onto it as my own secret recipe, but I thought that anyone could come up with this on their own, so I decided to make it public.
