Ingredients

  1. दही -500grm
  2. बेसन-2-3 बड़े चम्मच
  3. तेल-1बडा चम्मच
  4. हींग -1 चुटकी
  5. लाल मिर्च पिसी-1/2 छोटी चम्मच
  6. गरम मसाला -1छोटी चममच
  7. साबुत लाल मिर्च -2
  8. मेथी दाना -1/2 छोटी चममच
  9. करी पत्ता -8-10
  10. राई-1/2 छोटी चममच
  11. बारीक कटी अदरक -1/2 छोटी चममच
  12. बारीक कटी हरी मिर्च -2
  13. फूल गोभी-3-4 टकडे
  14. गाजर-1
  15. मटर दाना -1/2 छोटी कटोरी
  16. आलू -1
  17. पालक-150 ग्राम
  18. हरा धनिया बारीक कटा
  19. नमक स्वादानुसार
  20. हल्दी पाउडर -1 छोटी चममच
  21. ज़ीरा -1/2 छोटी चममच

Steps

  1. 1

    सबसे पहले पालक को साफ़ करके अच्छे से घोले और बारीक काट ले। बाक़ी सब्ज़ियों को भी धोकर बारीक काट ले। दही में बेसन, हल्दी,नमक डाल कर अच्छे से मथ ले। अब एक कढ़ाई में तेल डाल कर गरम करे फिर उसमें हींग, ज़ीरा, राई, मेथी दाना,करी पत्ता,अदरक,हरी मिर्च डालकर हल्का सा भून ले

    अब उसमें सारी कटी

    सब्ज़ियों को डालकर 5-7 मिनट को ढक कर भूने और उसमें चुटकी भर नमक भी डाल दे। जब सब्ज़ियाँ हल्की सी गल जाये तो उसमें मिर्च पाउडर भी मिक्स कर दे।

    फिर उसमें 1 गिलास पानी डाल कर एक उबाल लगाये फिर मथी हुई दही का घोल को डालकर लगातार चलाती रहे जब तक एक उबाल ना आ जाये । मंदी आँच पर कढ़ी को पकने दे जब तक कढ़ी पक कर गाढ़ी हो जाये। अब उसमें गरम मसाला और हरा धनिया डाल कर मिक्स कर दे और गैस बन्द कर दे। कढ़ी तैयार ।
