Egg Biscuits

I was looking for something different for breakfast and remember seeing baked eggs in muffin tins. So I added the biscuits. I made mine with green and red peppers, pepperoni, and Swiss cheese.

I was looking for something different for breakfast and remember seeing baked eggs in muffin tins. So I added the biscuits. I made mine with green and red peppers, pepperoni, and Swiss cheese.

Bake biscuits according to package directions.

Crack eggs into muffin tins. You can break the yolks if you want, but it's not necessary. Fill the remaining muffin cups with water.

Top eggs with your vegis, meat or other topping.

Bake at 350 for about 20min.

After eggs are set, top with cheese and place back in oven for a few minutes. Just until cheese is melted.

While eggs are baking, slice your biscuits in half.

Place one egg "muffin" on each biscuit and press down.

These can be frozen and reheated later. Place one sandwich in a paper towel, in the microwave. If frozen, defrost at 30% power for 1min 30sec. Then cook on high for 1min.
