Green Chillies Chicken Enchiladas

Ingredients

  1. 1 packagesYellow corn tortillas
  2. 1 canGreen enchilada sauce
  3. 2 canChopped green chilies
  4. 1 canChopped black olives
  5. 7 cupShredded sharp cheddar cheese
  6. 3 cupShredded chicken

Cooking Instructions

  1. 1

    Mix the chicken, olives and chillies in a bowl

  2. 2

    Put cheese in a separate bowl

  3. 3

    Use a large casserole dish

  4. 4

    Layer one layer of tortillas

  5. 5

    Add a large scoop of chicken mixture to each tortilla

  6. 6

    Add a hand full of cheese to each scoop of chicken mixture

  7. 7

    Continue to layer ending with tortillas on top, pushing down slightly to compress as you go

  8. 8

    Pour can if enchilada sauce over entire dish

  9. 9

    Cover the top with remaining cheese.

  10. 10

    Cover with foil and bake at 350 for 30 minutes.

  11. 11

    Remove foil and bake for 15 minutes

  12. 12

    Let sit for 10 minutes then cut squares and serve.
