Wash the eggplant

Make slight cuts in middle

Heat oil in pan add asafoetida, add cumin seeds,ajwain and mustard seeds as it starts shattering add ginger garlic paste and green chillies

Add chopped onions and tomatoes

Add Garam masala, dhaniya powder, haldi powder,red chilli powder and salt. Stir it till it leaves the oil

Stuffing is ready

Stuff it in eggplant

Heat oil in pan put the eggplants in pan cover it and cook it for atleast 20-25 minutes

Stuffed baigan is ready to serve😊
