
Chicken and Apple Cashew Salad

Preheat oven to 375

Cover a large sheet pan with tinfoil. Bake chicken 45 minutes or until chicken is cooked throughout.

Let chicken cool, remove skin and bones and shred the chicken with your hands.

In a small bowl whisk together mayo, yogurt, salt & pepper, celery, celery leaves and thyme.

Layer the lettuce on the bottom of the mason jar. Layer the chicken, apple, cranberries and cashews.

Add dressing when you are ready to eat.
