Ingredients

1/4 C.Light Coconut Milk
1/4 C.Natural Peanut Butter
2 Tbs.Soy Sauce
1 Tbs.Honey
2 tspSriracha
2 ClovesGarlic
1 Tbs.Lime Juice
16 oz.Cooked Medium Shrimp
1Diced Red Pepper
1Diced Yellow Pepper
1 C.Cooked Brown Basmati Rice
1/4 C.Fresh Cilantro
1Carrot

Steps

1

Make the coconut peanut sauce. Whisk together the first 7 ingredients, taste and add more lime juice if needed.

Layer in the jar in this order: Peanut sauce, shrimp, rice, peppers, carrots and cilantro.

Shake when ready to eat.
