Purple sweet potato roll cake

Cooking Instructions

Preheated oven to 175 degree celcius

Using a mixer, whisk white eggs together with sugar, lime juice, and cream of tartar. Whisk for around 4-5 minutes until it fluffy and soft. Set aside.

On the other bowl, mix egg yolks, sugar, flour, corn starch, cooking oil, milk and vanilla extract until it incorporate well.

Take 1/3 of the egg whites mixture at a time, fold it into the egg yolks batter until well combined.

Spread the batter into the baking pan, and bake it for 20-25 minutes.

For the filling: boil purple sweet potato until soft and mash it.

Mix butter and powder sugar into the sweet potato while it still warm.

When it's getting colder, mix in cream cheese.

Spread the filling into the cake. Roll it carefully.
