Ingredients

  1. Egg whites mixture:
  2. 4egg whites
  3. 1 tsplime juice
  4. 60 grsugar
  5. 1/2 tbspcream of tartar (optional)
  6. Egg yolks mixture:
  7. 4egg yolks
  8. 20 grsugar
  9. 40 grflour
  10. 20 grcorn starch
  11. 40 mlcooking oil
  12. 40 mlmilk
  13. 1/2 tspvanilla
  14. Filling:
  15. 300 grpurple sweet potato
  16. 150 grcream cheese
  17. 10 grpowder sugar
  18. 40 grmelted butter

Cooking Instructions

    Preheated oven to 175 degree celcius

    Using a mixer, whisk white eggs together with sugar, lime juice, and cream of tartar. Whisk for around 4-5 minutes until it fluffy and soft. Set aside.

    On the other bowl, mix egg yolks, sugar, flour, corn starch, cooking oil, milk and vanilla extract until it incorporate well.

    Take 1/3 of the egg whites mixture at a time, fold it into the egg yolks batter until well combined.

    Spread the batter into the baking pan, and bake it for 20-25 minutes.

    For the filling: boil purple sweet potato until soft and mash it.

    Mix butter and powder sugar into the sweet potato while it still warm.

  8. 8

    When it's getting colder, mix in cream cheese.

  9. 9

    Spread the filling into the cake. Roll it carefully.
