Chayote squash is known as Mirliton in Louisiana. It is known by many different names around the world. This is a simple rice dish I came up with as I was experimenting with ways to cook mirliton. Ingredients

  • 3Mirliton (Chayote)
  • 3 cupsrice cooked
  • 2 lbsausage
  • 2 sticksButter
  • 1large onion
  • 2 cansStewed tomatoes
  • Paprika
  • Dried parsley
  • Creole seasoning

Steps

  1. 1

    Cut mirliton in half and remove seeds, boil for 30 minutes. Cook 3 cups rice as usual.

  2. 2

    Slice and brown sausage in a large Texas sized skillet, or pot. Remove sausage toss in 2 sticks butter.

  3. 3

    Slice onions long and toss in hot butter. Peel mirliton and cut into bite sized cubes, add to skillet. Saute for about 10 minutes until onions and mirliton are soft.

  4. 4

    Knife through the cans if Stewed tomatoes to make them a bit smaller. Add Stewed tomatoes, cooked rice and sausage to skillet, add seasonings to taste, mix, cover and simmer for about 8 minutes.

I love cooking in my Texas Size Skillet and iron Pots! I love fermentation, sourdough bread, and other fun kitchen experememts. I have an old fashioned style of cooking that comes from shadowing my Grandma in the kitchen in the kitchen growing up, it was one of my favorite pastimes. Favorite seasonings are Tony Chachere's Cajun seasoning and Goya Total The Perfect Seasoning, I put them in almost every dish! I always cook with lots of love and a little magick! ✨
