Coconut cake with homemade milky coconut candy

Coconut cake; Grease 2 6" pans lightly with butter & coat with flour, preheat oven to 180 degrees Celsius or 350 degrees Fahrenheit.

In a bowl, sieve in flour & baking powder, add sugar & salt & mix.

Add all the wet ingredients & mix till there are no lumps, fold in the grated coconut last.

Bake for about 55minutes or until a toothpick inserted in the centre of the cake comes out clean.

Milky coconut candy; 1) Cut coconut into tiny chunks & set aside

2) In a saucepan, pour in 1 cup of milk & sprinkle 1tbsp sugar, place on medium heat & pour in the coconut.

3) Allow to cook till the milk starts drying out & getting thick, start stirring till milk dries out. Remove from heat.

Frost your cake with butter cream or whipped cream, or leave it plain. Garnish with the coconut candy & serve.
