Chicken Parmesan Meatloaf

Cooking Instructions
- 1
Preheat oven to 350°
- 2
Grease loaf pan, set aside.
- 3
In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese.
- 4
Try not to over-mix/over-handle mixture otherwise it will make it tough.
- 5
Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.
- 6
Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes.
- 7
Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted.
- 8
Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired.

Italian Meatloaf Italian Meatloaf
Decided one evening to make meatloaf & husband told me we really needed to use our Italian Sausage. So, I made this. My home cooking does follow specific recipe books as well as recipes that I call 'exploring'. Thank Goodness my hubbie doesn't mind being a Guinea Pig! Saying that, this recipe is not exact because I rarely use measuring cups, I totally follow my intuition & cooking skills so I apologize in advance if this does not turn out the way you want!
