preheat oven to 400°F

wash and cube unpeeled potatoes

peel and chop carrots

drain mushrooms and chop

chop broccoli

chop spinach

cover potatoes with water in pot. bring to boil

boil potatoes until soft

drain potatoes

add margarine, salt, garlic, pepper and milk

mash the potatoes

heat 2 tablespoons oil in large deep frying pan

add carrots and cook for 10 minutes

remove carrots to bowl

add 1 tablespoon oil to pan

add mushrooms and broccoli and cool for 10 minutes

remove to bowl

add chicken, thyme and pepper to pan

cook chicken until done

add to the chicken the cooked carrots, mushrooms and broccoli, tomato sauce, salt and spinach.

Mix broth and flour and add to pan.

cook until thick. approximately 5-10 minutes.

remove from heat and add cheese

lay meat mixture in a medium casserole pan

top with mash pototoes

bake until golden top, approximately 45 minutes
