  1. 250 gramspasta
  2. 500 gramsclam meat
  3. 6tomatoes
  4. 1olive oil
  5. 2chopped garlic cloves
  6. 1chili
  7. 1white wine
  8. 1white wine

    Put the water for the Spaghetti to boil

  2. 2

    Cover the tomatoes with boiling water, leave for a few minutes, then drain and slip off the skins.

  3. 3

    Cook the Spaghetti until al dente.

  4. 4

    While the pasta is cooking heat the olive oil in a large pan.

  5. 5

    Add the garlic and chopped chilli and fry gently for a few seconds.

  6. 6

    Stir in the chopped, peeled tomatoes, then add the clam meat and a splash of white wine.

  7. 7

    Cover the pan and cook for 3 or 4 minutes.

  8. 8

    Drain the pasta, then tip into the pan and toss together.

  9. 9

    Serve in bowls with bad for moping up the juices.

I like simple dishes that are quick and tasty. I also tend to prefer one pot cooking, so there is less to wash!!My mother is Italian, my father is French and I live in South Africa, my meals are never predictable ;-)
