Ingredients

8 servings
  1. 2 cupChopped fresh cantaloupe
  2. 6Green onions, chopped
  3. 3Kiwi fruit, peeled and finely chopped.
  4. 1 mediumNavel orange, peeled and finely chopped
  5. 1 mediumSweet yellow pepper, chopped
  6. 1 mediumSweet red pepper, chopped
  7. 1 canCrushed unsweetened pineapple, drained
  8. 2Jalapeño peppers, seeded and chopped
  9. 1 cupFinely chopped fresh strawberries
  10. cinnamon tortilla chips
  11. 10Flour tortillas
  12. 1/4 cupButter, melted
  13. 1/3 cupSugar
  14. 2 tspGround cinnamon

Steps

  1. 1

    In a bowl, combine the first eight ingredients. Cover and refrigerate for 8 hours or overnight. Drain if desired. Just before serving, stir in strawberries.

  2. 2

    For chips, brush tortillas with butter; cut each into eight wedges. Combine sugar and cinnamon; sprinkle over the tortilla, place on ungreased baking sheets, bake at 350°F for 10-14 minutes or just until crisp. Serve with fruit salad.
