The recipe i am sharing today is no onion and no garlic preparation. This quick aalu baingan masala curry is very easy to make.
Steps

Firstly, add 1 glass water and 1/2 tsp salt to chopped brinjal and potato. Keep it aside.

Heat 1 tbsp oil in a pan.

Drain water from brinjal and potato. Fry them in heated oil till they turn brown. Keep them aside.

In the same pan, heat 1 tbsp oil. Add jeera and chilli, ginger and coriander paste, saute it for a minute.

Then add all dry masala, give it a stir.

Add peanut powder, cook for a minute. Then add tomato puree, cover the pan with a lid and cook for 2-3 minutes.

Then add brinjal,potato,1 cup water and salt to taste.

Cover the pan and let the curry cook for 2-3 minutes on low flame.

Garnish with chopped coriander leaves and serve hot with chapatis or parathas.
