Cook the rice and let it cool

Chop onion, carrot, methi, green chillies and keep aside

In a kadai add oil, put mustard seeds and cummin let it crackle

Now add curry leaves and ground nuts fry till crisp then add chopped onion let it cook till onion turn into pink colour

Add green chillies, finely chopped carrot, methi leaves, coriander leaves turmeric powder salt and cook for a minute.

Add lemon juice

Finally add rice and give a nice mix.

Serve with pickle.
