On a diet or mindful eating journey like me and still have a few cravings for the sweet stuff? This will keep the cravings at bay and provide much needed nutrition. Place the ground almonds, coconut, lemon zest and juice, protein powder mix, vanilla paste and honey in a bowl and mix until combined.

Add very little water if needed to bring the mixture together if it is not sticky enough. The mixture should be slightly sticky upon touch. Texture should look like this.

Scoop 1 heaped tablespoon of the mixture with wet hands and roll into balls. Place on a baking tray lined with parchment then refrigerate for 30 minutes until set. Serve as a snack or alongside a nutritious brekkie smoothie or cereal. It’s so delicious! You can thank me later 😋
