Wash, de-stone, and slice the plum into quaters

Add the plums to a deep heavy bottomed pan, add the brown sugar and the 2 cinnamon sticks.

On medium heat let the plums, brown sugar and cinnamon sticks slowly simmer

Cook for 40 minutes stirring occasionally now

Cook until the fruits start to soften and the mixture becomes like a thick syrup, 10 more minutes

Once the plums have become soft, use a wide mesh/sieve to push the plum mixture through. A very fine sieve will leave you with juice only yet we want the flesh too. I used a spatula, placed a spoonful of the plum mixture and pressed with a spoon to get the juice and flesh

Return the seived plum mixture into the pan, on low heat let the mixture slowly simmer for 10 minutes. Check for your desired consistency after that. If you want a heavier texture, let it cook some more

This is a good enough consistency

Let the plum mixture cool before pouring into sterilized glass or plastic jars

Refrigerate and use within a week. Smear on your favorite bread, mandazi, donought or even pancake. Enjoy!
