Vietnamese Braised Salmon (Cá Hồi Kho Tộ)

To clean the salmon: Mix table salt with water, then add 2 tablespoons of lemon juice to the salt solution. Soak each piece of salmon in the mixture and rinse thoroughly. Let the salmon drain; you can now use it for cooking without rinsing again with plain water.

Marinate the salmon with seasoning powder and finely chopped shallots. Let it marinate for about 15 minutes.

Place a pot on the stove and add cooking oil. When the oil is hot, add a little chopped shallot and sauté until fragrant. Lower the heat, add the salmon, then add caramel sauce (made by melting sugar), fish sauce, and sugar. Keep the heat low. When it starts to boil, add a little water and continue simmering on low heat until the sauce thickens. Slice chili peppers and a few more shallots, place them on top of the salmon, and simmer a bit longer. Before turning off the heat, taste and adjust the seasoning as needed.
