Thick and Chunky Beef Stew

Ingredients

  1. 1 lblean cut of beef, cut into tiny cubes (I use already cut stir fry meat. It saves time) 
  2. 5 largepotatoes, cut in bite sized cubes
  3. 1 cupchopped baby carrots
  4. 5 cupbeef or veggie broth
  5. 1 cupflour
  6. 1/4 cupTony Chachere's Creole Brown Gravy Mix (or a dry packet of brown gravy mix) 
  7. 1 tbspworchestershire sauce
  8. 1 tsponion powder
  9. 1 tbspminced garlic
  10. 1/2 tsppaprika
  11. 1/2 tspbay leaves
  12. 1/2 tspbasil
  13. 2 tbspoil
  14. 1 1/2 tbspbutter
  15. 1 tspsalt or salt alternative

Cooking Instructions

    Put flour in a large bowl, then roll the beef cubes in the flour until fully coated.

    Heat oil in a pan or deep skillet. Once oil is hot, place flour-coated beef in pan. Turn beef frequently until it starts lightly browning. (flour will start looking "gooey". That's fine, so don't worry)

    Transfer lightly browned beef to a pot. Add potatoes, carrots, garlic, butter and broth. Stir.

    Add worchestershire sauce, gravy mix, basil, bay leaves, paprika, onion powder and salt. Stir again.

    Heat on high until boiling, then cover and reduce to simmer for 30 minutes.

    Let cool slightly to help it thicken, then serve! Enjoy! (can be served with biscuits or cornbread on the side.)

    ~VARIATIONS~ . You can add different items, such as: mushrooms, peas, onion, corn . Potato flakes can be used to thicken further, if desired. . Butter can be omitted, but helps lend to the richness.

I'm an apostolic pentecostal mommy of one that loves to cook for my family and friends. A homemade meal is a wonderful way to let someone know you care, and nothing says "i love you" like a happy, full tummy!There are many children that go to bed hungry and might not know where their next meal is coming from. That breaks my heart. If you are cooking and have lots of leftovers, will you consider giving a plate to a person or family in need?One random act of kindness on your part will make a world of difference to someone. it's letting them know that they are cared about and not alone. And all you need is a big heart and a plate of leftovers. :-)
