Ingredients

  • marinade for chicken:
  • 8-10 pieceschicken with skin
  • 1 tspginger paste
  • 1 tspgarlic paste
  • 1 tbspvinegar
  • to tastesalt
  • to inject masala:
  • 4 tbspolive oil
  • 2 tsplemon juice
  • 1 tspgarlic powder/garlic juice
  • 1/2 tspginger powder/ginger juice
  • 1/2 tspcinnamon powder
  • 1 tspred chilli powder(paprika is used..but here i used kashmiri +red chilli to get red colour)
  • to tastesalt
  • coating:
  • 2beaten eggs
  • 2 tbspplain flour
  • 2 tbspcorn flour
  • 1 tspginger garlic powder
  • to tastepepper and salt

Steps

  1. 1

    Clean chicken and prick all over(let the skin be there as it keeps the chicken moist and juicy).Then marinate chicken with marinade ingredients and keep for minimum 5 hours or preferably over night.

    Mix all the masalas under to inject. take a syringe with needle and fill it with the masala and inject it into the chicken pieces(this is done so that the masalas go inside the flesh and taste good)

    Mix flour,cornflour,pepper,salt,ginger garlic pdrs. dip each chicken pieces in egg and coat with flour.(do one by one). keep aside for 15 mins.

    THIS STEP IS OPTIONAL BUT I LIKE THE CRISPY SURFACE And LOOKS LIKE AL BAIK. next mix 1/2 cup flour 1/2 cup cornflour with 1/2 tsp salt and pepper..put these in a plastic bag(ziplock). put the chixken pieces and shake..this helps give the chicken perfect rough crumbly,crispy surface.

    Serve with Albaik Sauce Ingredients:
    1 cup thick yogurt
    2 tbsp cream
    2 tbsp mayonnaise
    1/2 tsp garlic paste
    1/2 tsp black pepper and salt to taste.mix everything.
